Diana asked me to post a picture of the Bosch Machine, so here it is! (I have a love/hate relationship with this thing.) But it's supposed to be the best for making whole wheat bread! Since I have tons of wheat in my food storage, I figured I better start using it up and rotating it.

It truly is a love hate thing....but over time it will be MORE love. TRuly! I think it's an art.
Cause with more and more practice, I think it is getting better. Really. Don't take it back yet. : D
Don't give up, it just takes time! We are Bosch people around here. My mom had has hers for EVER. I have had mine since we got married, (12yrs ago). Nothing makes cookies faster. And for bread....yeah....it rocks. Just work with it more and you will get it. I have the older model, my brother has the newer one like you, and he loves it! (I wish I could trade mine in or something!) anyway, befor you know it, you will be pumping out gorgeous and perfect bread to the whole neighbohood!
