Some yumminess for you!!

One of my favorite cookies in the world (o.k. my only favorite cookie) is Snickerdoodles. I don't know why but I absolutely LOVE them! Well, I haven't made them in forever and a day, and yesterday I was feelin' the itch to bake! (Doesn't happen often...) I had gone on a blog that I had found a while ago, called "Get off your butt and bake", and had seen a recipe claiming to be the BEST Snickerdoodles in the world. I thought to myself, "Hmmmmm...I wonder if it's better than the one I use?" So, I decided to write it down. (Especially since I lost MY recipe and I'd have to call my sister and see if SHE had it) At the last minute I chickened out and decided to go ahead and call my sister and see if she still had the recipe...
She didn't answer her phone (Dag Nab it all!!) Soooooooo...I had to use the recipe! (When I finally get that itch to bake, I gotta scratch it!!)
I just finished baking them and I'm going to be giving them to a friend who has had a birthday this week and to another who was extremely kind and has blessed our family quite a bit. And...I DON'T WANT TO GIVE THEM AWAY!!!!!!! I love this recipe!! These cookies are to die for!! Want to give them a try? You do?!! O.k....Here it is!!!!!

Snickerdoodles

2 1/2 cups All purpose flour
2 teas. Cream of Tartar
1 teas. Baking soda
1/2 teas. Salt
1/2 Cup (1 stick) unsalted butter- room temp.
1/2 cup Vegetable Shortening (Crisco)
1 1/2 Cups Sugar
2 large Eggs
1 teas. Pure Vanilla Extract

Cinnamon and Sugar Mixture

1 1/2 teas. ground cinnamon
1/4 cup Sugar

Sift together dry ingredients (excluding sugar)in large bowl. Mix butter and shortening until lightened( Medium speed) in color. (About 2 minutes) Add 1 1/2 cups of sugar in steady stream and mix for another 2 min. Add egg on low speed one at a time. Mixing well after each. Stir in Vanilla. Add dry ingredients in 2 additions, mixing until just blended after each. Scrape dough into clean bowl, cover with Saran Wrap and put in refrigerator for 6-8 hours or overnight.
Heat oven to 350 degrees. Roll in walnut sized balls. Combine the 1/4 cup of sugar and 1 1/2 teas. cinnamon in small mixing bowl. Place each ball in sugar mixture and coat evenly. Place 3 in. apart on cookie sheets. Bake for 10-12 min. or until lightly browned. Shorter baking time makes a softer cookie and longer would be a crispy one. Your choice...

I left mine in until I just barely saw some golden brown at the bottom of the cookie and they came out crispy on the outside and beautifully soft on the inside. MMMMMMMMMMMMMMMMMMM....I think I've had like 5 of them. Oink Oink...

P.S. I was just kidding (kind of) about not wanting to give them away! I'm still going to. It'll just be a little bit of a sacrifice. Which is ALWAYS good for you!!

My Binny-bam-boozle!

Can you tell that I am LOVING this!? I did another class and this was the outcome. I think a lot of this stuff is repetition. I just need to remember to do things like make a new layer, save in the right format and learn those millions of buttons. Not much really...just a trifle...

Here's another one!

Wow! I am learning so much in this class. Although I have to admit, this page was a bonus assignment and it should've been easy as pie, but I forgot something and it took me about 3 hours to figure it out and some help from the admin. DUH!!! This so much fun! My blogging friend Judy makes this look like it's so easy, but I'm working on a learning curve. My kids don't like it when I'm on the computer, so they pester me every minute or two. Kind of hard to work with when you have some headphones on. What're ya gonna do?!
But seriously! I am SO excited to be learning this!!!

My first digi page!

Can you believe it! I think I'm getting the hang of it. I took my first lesson on digital scrapbooking (That I paid for about 8 months ago) and this is the what I did!! I can't wait to do some more. Adobe Photoshop is so complex. I hope by doing it over and over I'll remember everything a little bit more.

My Son...

I was talking to my son on the phone tonight. And while looking at pictures of my son on my sisters blog, he decided to visit mine. I don't mind him on my blog because I love him and want him to see everything about the family. But I was a little worried that he might be offended if he read about when I worry about him. He saw the post back in June where I spoke of how sad I was that he didn't go on a Mission and read it out loud to me. Of course I cried all over again. And then I asked him to read the comments that I received afterwards. And he cried...and then he posted this comment...

Dear Mom,
I don't know when you will read this. It maybe tonight, it may be a month from now. But I wanted to take this time to tell you, I am your son. I have ben all my life. Just as you've been my mother, the same. I haven't made all the best choices. And I have hurt you more than I care to admit. I regret so much in my past, and at times its all that occupies my mind. And to be honest, theres a lot tht I regret about my present. I've been through phase after phase. Temptation after temptation. I've loved you and I've been so terribly infuriated by you that it could have been mistaken for hate. But I will always know that you are here for me. That you support my decisions, whether you agree with them or not. And that you love me. Mom, I don't know what I would do without you. There are so many things I wish I could take back. I wish that those times you cried because of me, the ones that I just cursed at you for, I wish I had hugged you and told you everything would be ok. I may not have been the best son. And in the ocean of religion, I was the fishing boat that swayed the entire time I was in the rough seas. But one thig is for sure, I have and will always hold you in te deepest part of my heart. Whether or not it is spoken, I will love you the same. I'm sorry I didn't go on a mission. it was nothing that you did, or didn't do. It wasmy own self. My pride and my selfishness. I lived for the now, rather than living the life I knew I should. But I DID decide to go on a mission. And although I decided against a conventional one, I am serving in a different way. I have told many people of the religion. I've disspelled countless rumors that many have held. I've met people from all parts of the globe and I've influenced them, even in the slightest ways. Even if they do not see it. I've invited some to church. And I've showed people the book of mormon. I've told people of Joseph Smith. And I've told people of God and his beloved son, Jesus christ. I may not be on a mission, but I AM a missionary. I KNOW that I am in the navy for a reason. And I KNOW that something good is coming from this. I love you mom. Deeply and truly From the deepest depths of my heart. You are my mother, and that will never change.

P.S. I need another pocket size book of mormon... I left mine with Parker Reinert in Great Lakes... lol

What a month....!

Wow! This last month has been a very busy one! I'm finally better after 3 weeks of horrible illness. And I have news! My son is getting married! To a beautiful girl, who is beautiful on the inside and out. She's not LDS, and that makes me sad, but...it's not up to me is it? I worry so much about my son. And sometimes I disassociate myself from my feelings because I get so worried that it affects me in my daily life. I get really depressed and down. But I love him SO much. And I know he loves me too. The other night, he called me because he got a really bad sunburn at the beach and he was itching so badly that he couldn't sleep. He wanted to know what could help him. I told him that he should go to the store and get some hydrocortisone cream. He went and couldn't find any so he got some Hemmorroid Cream. Funny huh!? He googled it and it actually DOES help with sunburns! It made me feel good that he still calls me when something is wrong and he wants his Mom.
My daughter has moved out the house and is now living in Boulder. She's my second worry...I don't know why my oldest two have such issues but they do. They are also from my first marriage. My husband has been their father since they were very little. Like 1 and 2 years of age. I would've thought that they wouldn't have the issues they have, but they really struggle with things. They both know the gospel is true, but they both don't want to live with "RULES" of the Gospel. The rest of the kids aren't like that. I mean, we have struggles with them, but it's the normal struggles of teenagers. They aren't trying to rebel as strongly as my oldest two. I don't know...They are both pretty good kids...they just don't want to go to church or follow the teachings they were raised with. Maybe it's because they had SO much responsibility when they were teenagers. I was pregnant ALL the time and I couldn't deal with a lot. They had to help out a LOT. I know they resented that. And I don't blame them for that at all. I would've resented it too!
They are on my mind ALL the time...

Let's see, what else? Oh yeah! Chase's birthday was on April 1st. He's such a good little boy. What am I saying? He's a huge boy! He towers above everyone by a head and shoulders. He's always been at the 90 percentile and above. He's really a gentle soul inside. He's extremely sensitive and doesn't like anyone to be upset with him. Sometimes he yells at his little bros. and sisters, but I can tell you that he came by it from his Dad and I. I have struggled with it forever. My Mom was a yeller when I was little. She stopped later on, but I continued the tradition unfortunately. I don't do it very often anymore. I have to be REALLY angry to yell now. Kelvin stuggles a little bit with it. I think it's due to his Diabetes. He never yelled before that. Either that or it was the 10 kids. It tends to wear you down. I don't regret having any one of my children. I love them all dearly. But I'm not going to lie, it has been a difficult thing for us. I look at some families and wonder how they do it. I struggle EVERY day. I DO want to stand before my Father and be able to say that I did my best. But I need to do better...
Here's some pics of the day that Chase received his Arrow of Light. It is the ONLY award that you can get during Cubscouts that will go with him to Boy Scouts. I am so pleased with him. I want to say proud, but you really aren't supposed to be prideful. So...I am well-pleased with my son and his desire to do what's right.

My parents were here visiting and we were so happy they could come and see Chase get his Arrow of Light.

Kelvin's parents were also able to attend since they live here. And Chase's oldest Brother Shawn is to the far right.

Joseph and Emma are graduating from preschool this next month. They are so cute! And so different. Emma is such a good little girl. She has her moments, everyone does, but for the most part, she is the sweetest little thing. Always trying to be good. And Joseph is the exact opposite!! LOL! He's a sweetheart but man does he get into a LOT of trouble!! He likes to hit his sisters, and so he has to sit in his room for quite a while. He also likes to say bad words. Anything to get attention. Good or bad. He loves to cuddle with Mom too. (So why is it that he also likes to be mean to me too?) He gets a Nintendo DS and climbs up next to me and puts my arm around him and then he settles in to play! I love that. Here's a picture of Joseph and Emma in their caps and gowns. I took a picture of the picture! Aren't they adorable!

Here's another one of them without the cap and gown. Again, I took a pic of the pictture!

Brynleigh is my little snugglebug. She's my youngest. I can now see why you could be closest to your youngest! You don't want them to grow up! You know you aren't having any more so you hang on to EVERY moment that you have. When she is being hurtful I tell her she is hurting my heart. She now tells me that she loves my heart. So cute. If I say a sharp word to her, her heart is broken and she falls to the ground or runs away to cry her heart out. Then she comes back to see if I'm concerned about it. I have to say it cracks me up. She hates when I'm upset with her. I tell her that I love her no matter what, even when she's being naughty. I think that that comforts her. Of course, we have to go through all the "I'm sorry" too. And the Time-outs if it continues. She usually doesn't have too many time-outs. She's a pretty good little girl who is SLIGHTLY spoiled...

Here's some photos of the kids with their Easter buckets. We made sure the Easter Bunny came on Saturday. They were happy to have them early. Tanner and Laura were still on the Pioneer Trek, so they got their bucket later.

Chase and McKenna wouldn't want me to put their pics up right now. I forget to get Laura and Tanners pictures up because they got home from the trek and we were talking about that and Easter buckets were secondary. They had so much fun on the Trek. They had to wear clothing from back when the pioneers crossed the plains, and push handcarts with their belongings. I'm so glad they had so much fun! I love when they enjoy things that are good for your character. LOL!

Oh yeah, and Beth is graduating this next month too. I'll have to get her picture up here too. She dyed her hair black. Not gonna lie, the first time I saw it I thought she looked like a vampire. She's so fair and black is SO dark! After a while you get used to it. I hope she changes it back soon though. I miss her VERY beautiful strawberry blond hair.

So, there ya go...busy here. Tomorrow I'm going to Cali to visit my Mom and my Sister. I'm excited and dreading it too. I think the dreading part is due to my depression, but I'm forcing myself to go and I know I'll have fun! Ciao!

Elder F. Enzio Busche

I'm still sick...really sick...But this time the doctor dosed with about 6 meds. Bout time! Why don't they just give you the antibiotics the first time? In keeping with the message from above, I forgive him and won't hold it against him.
